Roasted Corn Salad by Nikita Bhuyan

Looking for the perfect summer side dish? Look no further, as we have a simple and delicious recipe by created by Nikita Bhuyan. We hope you love her recipe as much as we do!



•2 ears of roasted corn cut off the cob (I roasted them on a pan for 4 minutes on each side) 

•1 cup chopped cherry tomatoes 

•1 can of black beans, washed and drained 

•chopped cilantro to your liking

•pinch of salt and pepper

•2 tablespoons of lemon juice 

•1/2 chopped jalapeño, or more if you’d like it extra spicy 

Your choice of StarLite Cusine enchiladas (either queso, suizas, rojas or verdes variety).


Mix all ingredients for the salad in a bowl. Taste for seasonings and add more salt, pepper, lemon juice, or jalapeño to your liking. Prepare your choice of enchiladas according to package directions. Serve with salad and enjoy!
