Want something refreshing but still hearty? Try making our Taquito Salad for a summer night’s dinner!
- 1 head of lettuce
- 1 tomato
- 1/2 can corn
- 1 can pinto (or black) beans
- 1 bell pepper
- 1 ripe avocado
- vegan shredded cheese
- vegan sour cream
- StarLite Cuisine Vegan Taquitos or Rolled Tacos (flavor of choice, we used Beef Style Taquitos)
Preheat your oven to 350°. When preheated, place the taquitos on a tray and put in oven.
Start by chopping the lettuce into strips.
Dice 1 tomato.
Thinly chop the bell pepper.
Halve the avocado, removing pit, and cut into cubes.
Add chopped ingredients to a large bowl (or two medium sized bowls). Add corn and beans.
Remove taquitos from oven after appropriate cooking time (15-20 minutes). Cut taquitos into bite size pieces and add to bowl. Sprinkle with vegan cheese and top with vegan sour cream. Add any other additional toppings you like. Enjoy!
